Bill here is a recipe that a friend of mine gave me to make Quark. The procedure takes some time, but the cost is much less.
Here is the cheese recipe:
Buy one gallon of reduced fat (2%) organic milk (Publix brand is fine here in Florida) and one pint of buttermilk (T.G. Lee, 1% is fine; Friendship is also OK, you may want to get this from a health food store, but I had a bad experience with other brands).
Pour it all in one pot (preferably stainless steel), mix it well, and put it on a stove burner. Turn the burner on and put it in the medium position. This way you warm up your milk for about 20-21 minutes. Take it away from the burner and leave it alone for about 23-24 hours.
Repeat the same procedure with the stove thereafter and have the pot with the mixture cool down for about 3-4 hours.
Then, draining it in a cheesecloth. I put the cheesecloth over a colander. Dependent on the consistency of the fermented product, draining time can last between 3 and 8 hours. If you leave your cheesecloth hanging, as some people do, then the process will be very expedient.
